Working with a deep fat fryer in the house comes with a whole lot of negatives. I would never have one of these things in my own house, because they cause such a greasy mess as well as generate an unholy stink. At work I have no choice. This steakhouse is famous for its french fries, and my good friend Ed and I make 8 strange types of french fries, including a delicious sweet potato french fry which is quite popular. I must admit that after working here for a couple of years, I have stopped eating fried foods almost entirely, now they turn my stomach. As bad as the heat can be while sitting over the deep fryer, the worst area is the indoor air conditions. The entire family room reeks of heavy grease as well as scorched oil, which is why the bosses put in an extravagant new ventilation plan to clear the air. I have to say that the new ventilation plans have made all the difference in the world. The air quality in the family room smells as fresh as a clean Summer breeze, even when I am sitting right over the deep fat fryer. There has never been a/c in the back room, but surprisingly the new ventilation plan helps with that, too. By lowering the humidity and eliminating the grease as well as smoke it makes the air quality so much more tolerable that I don’t mind the heat. To make sure this never changes, I have been given a new duty – each weekend I have to deep clean all the air ducts as well as exhaust vents for the back room. Wiping down the inside of greasy air ducts is not fun, but it’s worth it.
